Homemade Granola Bars to Make for a Quick and Healthy Snack

We embarked on a journey since becoming parents to eliminate funky ingredients in our food, for our own health and for our littles. These homemade granola bars are a fan favorite in our household! We keep them in the fridge so our boys can grab a quick and healthy snack anytime they get a hunger pang.

Ingredients for Homemade Granola Bars

  • 1 cup smooth/creamy peanut butter
  • 2/3 cup honey
  • 3 Tablespoons chopped pepitas OR nuts (we used almonds)
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 2 1/2 cups dry oats
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon chia or flax seeds
  • 1/3 cup mini chocolate chips – or regular chocolate chips, chopped
  1. Line an 8×8 baking dish with parchment paper. If you haven’t used this before, we like this one from Amazon here!
  2. Mix together peanut butter, honey, vanilla and salt.
  3. Add the oats, chocolate chips and the pepitas (or nuts). The mixture might seem dry at first, but keep stirring and it will come together. Stir to combine and press firmly into the pan. Use a second piece of parchment paper and the back of a measuring cup to help flatten the mixture. Chill for at least 1 hour, then slice into bars.
  4. Store the bars in the fridge!

You can easily change up the mix ins for these homemade granola bars! Try your favorite dried fruits or nuts to change up the flavors.

If you prefer, you could also roll these into granola balls for some “energy bites”.
