Leftover Turkey Easy Pot Pie Recipe

Freezer turkey pot pies are a must when you have too much leftover meat – or you want to cook in bulk to save money!

It is the day after Thanksgiving, everyone has had their fill of turkey, ham, yams, green bean casserole, and they are tired of it. No one wants to eat any more turkey by itself but there is still so much to consume. Do you dare waste it? Nonsense! There shall be no wasting of the turkey! Instead, you turn it into something else wonderful, that requires minimal prep time, as you are also exhausted from cooking. These can also be frozen for an easy dinner another day!

Let’s turn it into a pot pie! This recipe requires minimal ingredients, time, and is beyond tasty enough to satisfy even the most turkey exhausted family member. A quick note, this recipe is great for more than just turkey! You can use chicken, beef, or ham for this as well and it will still be delicious!

Freezer Turkey Pot Pie Ingredients

  • 2 pie crusts – one for dish and one for the cover. I use pre-made ones to save time but if you’re fancy, use your own homemade ones.
  • Turkey (Chicken, Beef, and Ham are great alternatives)
  • Frozen mixed vegetables
  • ½ stick of Butter (we use plant based butter from Country Crock)
  • 1/4 cup of flour – enough to make a thick paste for the sauce.
  • Milk (your choice – we use Almond milk)
  • Salt & Pepper to season
  • Minced garlic and onion – just a smidge

Take your turkey and cube it, then mix your frozen vegetables and turkey together and place aside. 

Place your pie crust into your pan, and fill it with the frozen vegetables and turkey. Set aside for a few minutes.

Melt some butter down add flour to the pan. This should be a thick paste consistency. Slowly add milk until the mixture becomes a gravy consistency. Add the salt and pepper to season, and look to see if there is enough mixture to fill the pie to the top.

If there is not, simply add a little bit of flour and milk until the desired amount is there.

Once completed you will then add your second pie crust to the top!

Placing the second pie crust on top, take some scissors and cut the extra crust off the pie.

Bake at 375 for about 30-45 minutes or until the pie crust is golden brown. 

Let cool for a few minutes then enjoy your beautiful treat!
